Our awesome hens have recently decided to start laying, and man have they really been at it. My little silkie girls have decided to start setting so we're not collecting from them at the moment. The Polish, Ameraucana, Faverolles and my turkeys have been putting out pretty good. My Frizzle girls are still thinking about it I suppose as we've only gotten a couple from them (but I also only have 2). I've given away about 9 dozen eggs and had to compost 2 dozen so far. I did some research and will try my hand at preserving eggs. I've read up on the process (simple, straightforward) and there appear to be a couple of ways to do it. I'm going with the lard. Basically, coat the egg with lard and pack it in salt. I've read that you can also use salted butter, coconut oil, etc but I have quite a bit of home rendered lard already so why buy something else. I've got several airtight containers already since I'm somewhat of a packrat, so the only thing I actually had to buy was salt. Well, after we collect eggs this afternoon I'll start playing in lard and salt (and as a bonus should have some super exfoliated and soft hands haha) but as of now (and from just this week alone) I've got about 2 dozen eggs to put up. The plan is to put them up then when it gets too hot, too cold or my ladies start to molt I won't have to pay an outrageous price for crappy eggs at the grocery store. Whenever that time comes, I'll update with how the eggs turn out.
**This was originally posted on my wordpress blog in March, the eggs are still sitting in the salt and I have not cracked any open yet, but will wait another month or so before I try it out**

--means "Hello" in Cherokee. Greetings and welcome to Madame Apothecary. This is my little spot of internet to share my passion of holistic living, farming, crafting, belly dancing, prepping and anything else that catches my fancy. While I'm not a "doomsday" prepper by any means, I do believe in having supplies on hand for any emergency, be it power outage, illness, job loss, severe weather, etc. I am a FIRM believer in women being knowledgeable, powerful and capable to care for and defend themselves and family/friends if the need should ever arise. I have an ever growing and wide range of interests that I thoroughly enjoy from gardening to shooting, music to glass engraving. Hopefully down the road I can do a few giveaways of some awesome herbal or crafty goodies. I was raised on a farm and live on a small farm now in a small town. I can't imagine living in a large city (I despise going to Savannah for anything). I love being outside and doing the best I can to live in harmony with nature (sounds so hippy, right? haha my husband says so anyway). At any rate, I'm still figuring out the whole Google thing so it may take a while and quite a few mistakes/revisions before I get the hang of this. Bare with me and hopefully we can enjoy this ride. Thanks for stopping by!
